A spicy and savory dish made with tender chicken thighs, jalapeño peppers, and a hint of sweetness from honey, perfect for busy weeknights.

Ingredients

  • 1 lb chicken thighs
  • 1 onion, diced
  • 2 jalapeño peppers, sliced
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp sesame seeds
  • 2 cups cooked rice

Instructions

  1. Cut the chicken thighs into bite-sized pieces.
  2. In a pan, heat oil and sauté the onions until translucent.
  3. Add the jalapeño peppers and cook for another 2 minutes.
  4. Add the chicken pieces and cook until they are browned and fully cooked.
  5. In a bowl, mix soy sauce, honey, minced garlic, and grated ginger. Pour the sauce over the chicken and stir until evenly coated.
  6. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  7. Serve the jalapeño chicken over a bed of rice and garnish with sesame seeds.

Notes

Adjust the number of jalapeños for desired heat level. Serve with creamy avocado or sour cream to balance the spice.
