A comforting and flavorful Italian chicken casserole made with shredded rotisserie chicken, pasta, and gooey cheese, perfect for family gatherings.

  • 1 rotisserie chicken, shredded
  • 2 cups cooked pasta (penne or fusilli)
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup chopped bell peppers (optional)
  • 1/2 cup chopped onions (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cooked pasta, marinara sauce, Italian seasoning, and optional bell peppers and onions. Mix well.
  3. Transfer the mixture to a greased baking dish.
  4. Sprinkle the shredded mozzarella and grated Parmesan cheese on top.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden brown.
