A quick and easy Instant Pot recipe for honey teriyaki chicken that combines sweet and savory flavors, perfect for busy weeknights.

  • 1.5 pounds boneless, skinless chicken thighs
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Sesame seeds (for garnish)
  • Green onions (for garnish)

Instructions

  1. Add the chicken thighs to the Instant Pot.
  2. In a separate bowl, whisk together honey, soy sauce, rice vinegar, and minced garlic. Pour the mixture over the chicken.
  3. Close the lid and seal the valve. Cook on high pressure for 10 minutes.
  4. Once cooking is complete, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  5. Remove the chicken from the pot and set aside.
  6. In a small bowl, mix cornstarch and water to create a slurry. Add to the cooking liquid in the Instant Pot and set to sauté until the sauce thickens.
  7. Slice the chicken and return it to the pot to coat in the sauce.
  8. Serve warm, garnished with sesame seeds and chopped green onions.

Notes

Customize the sauce with crushed red pepper flakes or ginger for added spice. Cut against the grain for more tender slices.
