A quick and flavorful dish featuring tender shredded chicken, black beans, and vibrant toppings – all made conveniently in the Instant Pot.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels, frozen or fresh
  • 1 cup salsa
  • 1 cup chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Toppings: diced tomatoes, sliced avocado, shredded cheese, sour cream, chopped cilantro

Instructions

  1. Place the chicken breasts in the Instant Pot.
  2. Add the rice, black beans, corn, salsa, chicken broth, chili powder, cumin, salt, and pepper.
  3. Close the lid and set the valve to sealing.
  4. Cook on manual high pressure for 10 minutes.
  5. Allow for a natural release for 10 minutes, then quick release any remaining pressure.
  6. Shred the chicken with two forks and mix everything together.
  7. Serve in bowls and top with your desired toppings.

Notes

For a vegetarian version, swap the chicken for extra beans or roasted vegetables. Adjust consistency with additional broth or salsa if needed.
