Ingredients

  • Water: enough to fill your sous vide container
  • Boneless, skinless chicken breasts: 2 pieces (about 1 pound / 450 grams)
  • Salt: 1 teaspoon (5 grams)
  • Black pepper: 1/2 teaspoon (1 gram)
  • Olive oil: 1 tablespoon (15 milliliters)
  • Garlic powder: 1/2 teaspoon (1 gram)
  • Fresh thyme or rosemary sprigs: 2-3 sprigs
  • Lemon: 1 (sliced)

Instructions

  1. Fill your sous vide container with enough water to submerge the chicken breasts fully.
  2. Set the sous vide machine to 140°F (60°C) and let the water heat up.
  3. Season the chicken breasts with salt, black pepper, and garlic powder on both sides.
  4. Drizzle olive oil over the chicken, ensuring they’re evenly coated.
  5. Place the chicken breasts in a resealable plastic bag or vacuum-seal bag.
  6. Add the fresh thyme or rosemary sprigs on top of the chicken in the bag.
  7. Place lemon slices over the chicken and herbs in the bag.
  8. Seal the bag, removing as much air as possible.
  9. Once the water reaches the desired temperature, submerge the sealed bag into the water bath.
  10. Cook the chicken in the sous vide for 1.5 to 4 hours.
  11. After cooking, remove the bag from the water bath and take out the chicken.
  12. Pat the chicken dry with paper towels to remove excess moisture.
  13. Heat a skillet over medium-high heat and add a little olive oil.
  14. Sear the chicken breasts for 1-2 minutes on each side for a golden crust.
  15. Remove from the skillet and let the chicken rest for a few minutes.
  16. Slice and serve with the lemon slices and herbs for garnish.
