- Boneless, skinless chicken breasts: 2 pieces (about 1 pound / 450 grams)
- Salt: 1 teaspoon (5 grams)
- Black pepper: 1/2 teaspoon (1 gram)
- Olive oil: 1 tablespoon (15 milliliters)
- Garlic powder: 1/2 teaspoon (1 gram)
- Fresh thyme or rosemary sprigs: 2-3 sprigs
- Lemon: 1 (sliced)
- Fill your sous vide container with enough water to submerge the chicken breasts fully.
- Set the sous vide machine to 140°F (60°C) and let the water heat up.
- Season the chicken breasts with salt, black pepper, and garlic powder on both sides.
- Drizzle olive oil over the chicken, ensuring they’re evenly coated.
- Place the chicken breasts in a resealable plastic bag or vacuum-seal bag.
- Add the fresh thyme or rosemary sprigs on top of the chicken in the bag.
- Place lemon slices over the chicken and herbs in the bag.
- Seal the bag, removing as much air as possible.
- Once the water reaches the desired temperature, submerge the sealed bag into the water bath.
- Cook the chicken in the sous vide for 1.5 to 4 hours.
- After cooking, remove the bag from the water bath and take out the chicken.
- Pat the chicken dry with paper towels to remove excess moisture.
- Heat a skillet over medium-high heat and add a little olive oil.
- Sear the chicken breasts for 1-2 minutes on each side for a golden crust.
- Remove from the skillet and let the chicken rest for a few minutes.
- Slice and serve with the lemon slices and herbs for garnish.
