Ingredients

  • Steak, previously cooked
  • Water, enough to submerge the steak in your sous vide container
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, 1 tablespoon (15 ml)

Instructions

  1. Fill your sous vide container with enough water to fully submerge the steak.
  2. Set the sous vide machine to 130°F (54°C) for medium-rare or adjust according to your desired doneness.
  3. While waiting for the water to reach the desired temperature, season the steak with salt and pepper.
  4. Place the seasoned steak into a vacuum-seal or resealable plastic bag.
  5. Seal the bag, removing as much air as possible.
  6. Once the water has reached the target temperature, submerge the sealed bag in the water bath.
  7. Heat the steak in the sous vide bath for 1 to 2 hours, depending on thickness.
  8. Remove the steak from the bag and pat it dry with a paper towel.
  9. Heat olive oil in a pan over high heat.
  10. Sear the steak in the hot pan for 30 seconds to 1 minute on each side for a crispy exterior.
  11. Let the steak rest for a few minutes before serving.
  12. Slice and serve the steak with additional salt and pepper to taste, if desired.

Notes

  • Pat the steak dry before searing to achieve a crispy crust. Adjust searing time based on steak thickness for best results. Drizzle extra olive oil over the steak before serving for added flavor.
