1/4 cup (60 ml) salt
2 packed tablespoon s brown sugar
1 tablespoon (15 ml) paprika
1/2 tablespoon (8 ml) garlic powder
1/2 tablespoon (8 ml) onion powder
1 teaspoon (5 ml) dry mustard
1 tablespoon (15 ml) dried thyme
1/2 teaspoon (3 ml) cayenne pepper
1 brisket approximately 5 pounds (2.27 kg), flat or point-cut
Instructions
Fill a sizable pot or another heat-safe container with water. Insert the sous vide immersion device and adjust the temperature to 155° Fahrenheit. Ensure the water level is between the minimum and maximum marks on the circulator.
Combine the salt, brown sugar, paprika, garlic powder, onion powder, dry mustard, dried thyme, and cayenne pepper in a small bowl. Stir until the spices are thoroughly mixed.
Set the brisket on a cutting board. Evenly coat the brisket with about two-thirds of the spice blend, gently massaging it into the meat. Save the rest of the spice mix for later steps.
Place the seasoned brisket in a food-safe bag. Use a vacuum sealer or the water displacement technique to remove excess air and seal the bag tightly.
Once the water reaches 155° Fahrenheit, submerge the sealed bag in the pot, ensuring the brisket is entirely covered. If necessary, use weights or silverware to keep the bag submerged.
Let the brisket cook in the water bath for 24 to 36 hours until it reaches your preferred tenderness. Note that while the brisket is fully cooked at 24 hours, extending the time to 36 hours will result in a more tender texture.
Near the end of the cooking duration, heat the oven to 300° Fahrenheit and adjust the oven rack to a lower-middle position.
After the brisket has cooked to your satisfaction, carefully lift the bag out of the water bath. Remove the brisket from the bag and dry it thoroughly with paper towels. Sprinkle the remaining spice mixture over the brisket.
Place the spiced brisket in a baking dish. Bake it in the preheated oven, uncovered, for 2 hours or until a deep crust forms on top.
Once the crust has developed, carefully take the brisket out of the oven. Move it to a cutting board and cover it loosely with aluminum foil. Allow it to rest for 30 minutes, then carve the brisket against the grain and serve with your choice of sides.
