A comforting bowl of juicy chicken coated in a sweet and spicy hot honey glaze, served over fluffy rice and vibrant roasted vegetables.

  • 2 Chicken breasts
  • 1/4 cup Hot honey
  • 1 cup Rice
  • 2 cups Mixed roasted vegetables (bell peppers, broccoli, carrots)
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tbsp Olive oil

Instructions

  1. Cook the rice according to package instructions, usually taking 15 to 20 minutes. Start this first.
  2. Season the chicken breasts with salt and pepper.
  3. Fry or grill the chicken until cooked through, aiming for a golden-brown exterior.
  4. In a bowl, mix hot honey with olive oil to create a glaze.
  5. Once chicken is cooked, coat it in the hot honey glaze.
  6. Serve the glazed chicken over rice and top with roasted vegetables.

Notes

For added flavor, marinate the chicken in olive oil infused with spices for 30 minutes before cooking. Consider garnishing with sliced green onions or sesame seeds.
