A comforting dish that combines tender chicken, sweet potatoes, and green beans in a flavorful honey garlic marinade, perfect for family dinners.

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste

Instructions

  1. Whisk together honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper until well combined.
  2. Marinate chicken for at least 30 minutes or up to 8 hours in the refrigerator.
  3. Preheat the oven to 400°F.
  4. Spread cubed sweet potatoes on a lined baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat.
  5. Roast sweet potatoes for about 15 minutes until they start to soften.
  6. Remove baking sheet from oven and push sweet potatoes to one side. Place marinated chicken on the other side and arrange green beans around them.
  7. Drizzle remaining marinade over chicken and vegetables.
  8. Bake for 20-25 minutes until chicken reaches an internal temperature of 165°F and sweet potatoes are tender.

Notes

For extra flavor, marinate the chicken overnight. Ensure even cooking by cutting sweet potatoes into uniform cubes.
