Ingredients

Scale
  • 2 lbs Chicken Wings
  • Yellow Mustard for binder
  • 2 tablespoons Brown Sugar
  • 1.5 tablespoons Kosher Salt
  • 1 tablespoon Smoked Paprika
  • ½ tablespoon Onion Powder
  • ½ tablespoon Granulated Garlic
  • ½ tablespoon Gochukaru Flakes
  • 2 teaspoons Ground Cumin
  • 2 teaspoons Black Pepper
  • 1.5 teaspoons Cayenne Powder
  • 2.5 tablespoons Chili Oil
  • 2.5 tablespoons Honey
  • 1.5 tablespoons Minced Garlic
  • ¾ teaspoon Sesame Seeds
  • Sliced Scallions for garnish
  • 1 quart Frying Oil

Instructions

  1. Coat the chicken wings with yellow mustard, which acts as a binder for the spices.
  2. Sprinkle brown sugar, kosher salt, smoked paprika, onion powder, granulated garlic, gochukaru flakes, ground cumin, black pepper, and cayenne powder over the wings. Mix well for an even coating.
  3. Let the wings marinate for at least 30 minutes.
  4. Heat the frying oil in a deep pan until it reaches a high temperature.
  5. Carefully add the marinated wings to the hot oil, frying for 10-12 minutes until golden brown and crispy.
  6. Prepare the honey chili glaze by mixing chili oil, honey, minced garlic, and sesame seeds in a bowl.
  7. Once cooked, remove the wings from the oil and toss them in the honey chili glaze until fully coated.
  8. Serve the wings hot, garnished with sliced scallions.

Notes

For extra crispiness, consider double-dipping the wings. Let them rest, then fry a second time for an even crunchier finish.
