A comforting and healthy white chicken chili that combines tender chicken, creamy white beans, and zesty green chilies.

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 can white beans, drained and rinsed
  • 1 can green chilies
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup corn (frozen or fresh)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup heavy cream (or Greek yogurt for a lighter option)
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add diced onion and minced garlic; sauté until translucent.
  3. Stir in the shredded chicken, white beans, green chilies, chicken broth, corn, cumin, chili powder, salt, and pepper.
  4. Bring to a simmer and let cook for about 20 minutes, stirring occasionally.
  5. Remove from heat and stir in the heavy cream (or Greek yogurt) until well combined.
  6. Serve hot, garnished with fresh cilantro.

Notes

Taste and adjust salt and spice levels as needed. For a vegetarian option, omit chicken and use double beans.
