A comforting and nutritious chili featuring shredded chicken, white beans, and spices, perfect for any weeknight dinner.

  • 1 lb cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream or Greek yogurt
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Sauté the diced onion and minced garlic until translucent in a large pot.
  2. Add the shredded chicken, drained white beans, drained corn, chicken broth, cumin, chili powder, salt, and pepper.
  3. Bring the mixture to a boil.
  4. Reduce the heat and let it simmer for 15 minutes.
  5. Stir in the heavy cream or Greek yogurt until well combined.
  6. Serve hot, garnished with fresh cilantro.
