A comforting and nutritious chicken pot pie soup featuring tender chicken, vibrant vegetables, and a creamy broth.

Ingredients

  • 1 lb chicken breasts
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 3 cups chicken broth
  • 1 cup almond milk (or other dairy-free milk)
  • 2 cups potatoes, diced (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in your preferred cooking vessel.
  2. Add the diced onion, carrot, and celery. Sauté for 5-7 minutes until the onions become translucent and fragrant.
  3. Introduce the chicken breasts to the pot and season with garlic powder, thyme, and your desired amount of salt and pepper.
  4. Pour in the chicken broth and almond milk, stirring to combine all the flavors.
  5. If using, add the diced potatoes for extra heartiness.
  6. For an Instant Pot, seal the lid and cook on high pressure for 10 minutes. For a slow cooker, set it to low for 6-8 hours. If on the stovetop, let it simmer for 20-30 minutes until the chicken cooks through.
  7. Remove the chicken from the pot, shred it, and return it to the soup.
  8. Optionally, blend a portion of the soup to introduce a creamy consistency.
  9. Adjust seasoning to taste and serve hot.

Notes

Experiment with different vegetables or spices to customize your soup. For creaminess, blend some of the soup before serving.
