A nourishing twist on the classic chicken parmesan, featuring crispy breaded chicken served with marinara and melted mozzarella.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • ½ cup whole wheat flour
  • 3 large eggs
  • 1.5 cups shredded mozzarella
  • 1.5 cups marinara sauce
  • 1 cup whole wheat breadcrumbs
  • ½ cup grated Parmesan cheese
  • Black pepper (to taste)
  • Dried basil (to taste)
  • Dried parsley (to taste)

Instructions

  1. Butterfly and pound the chicken breasts to about ¼ inch thick.
  2. Set up three shallow bowls: one with whole wheat flour, one with whisked eggs, and one with a mixture of breadcrumbs, grated Parmesan, black pepper, dried basil, and dried parsley.
  3. Dredge each chicken cutlet in flour, dip it in the egg, and then coat it with the breadcrumb mixture.
  4. Place the breaded cutlets on a baking sheet lined with parchment paper.
  5. Bake for 30 minutes, flipping halfway through.
  6. Top each cutlet with marinara sauce and shredded mozzarella.
  7. Broil for an additional 2 minutes until the cheese melts and turns golden.

Notes

Let the breaded cutlets rest for a few minutes before baking for better adherence. Feel free to experiment with herbs in the breadcrumb mixture.
