  • 4 chicken breasts
  • 1 can (15 oz) pineapple chunks, drained
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the Crock-Pot.
  2. In a mixing bowl, combine the pineapple chunks, soy sauce, brown sugar, ketchup, minced garlic, and minced ginger.
  3. Pour the sauce over the chicken, ensuring each piece is coated well.
  4. Add the sliced bell pepper and onion on top of the chicken mixture.
  5. Season with salt and pepper to taste.
  6. Cover and cook on low for 6–8 hours or on high for 3–4 hours until the chicken is cooked through.
  7. Serve over rice or noodles.
