  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup canned pineapple chunks (drained, juice reserved)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1/4 teaspoon ground ginger
  • 2 cups cooked jasmine or brown rice
  • 1/2 cup red bell pepper (diced)
  • 1/4 cup green onion (sliced)
  • 1 tablespoon sesame seeds (optional, for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces and cook until golden brown and fully cooked, about 6-7 minutes. Remove chicken and set aside.
  3. Add reserved pineapple juice, pineapple chunks, and diced bell pepper to the skillet and sauté for 3-4 minutes until caramelized.
  4. In a small bowl, whisk together soy sauce, honey, minced garlic, ground ginger, and cornstarch. Add 2 tablespoons of reserved pineapple juice.
  5. Pour the sauce into the skillet, stirring until thickened (about 2-3 minutes).
  6. Return chicken to the skillet and toss to coat; simmer for 1 minute to meld flavors.
  7. Serve over warm rice, topped with green onions and sesame seeds.
