A delightful twist on the classic chicken parmesan, featuring tender ground chicken layered with marinara sauce, mozzarella, and parmesan, topped with crispy breadcrumbs.

  • 1 tablespoon unsalted butter
  • 1 cup panko breadcrumbs
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon Italian seasoning
  • 1 tablespoon oil
  • 1 small onion, diced
  • 1 teaspoon salt (divided in half)
  • 4 cloves garlic, roughly chopped
  • 2 pounds ground chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 770 mL marinara sauce (1 jar Rao’s)
  • 1 cup grated parmesan
  • 2 sprigs basil
  • 1½ to 2 cups shredded mozzarella cheese

Instructions

  1. Melt the butter in a small skillet over medium heat. Add panko breadcrumbs, and mix in ¼ teaspoon salt, garlic powder, onion powder, and Italian seasoning. Stir until golden brown, then remove from heat.
  2. In a large skillet, heat the oil over medium heat. Sauté the diced onion until it turns translucent, about 3-4 minutes. Toss in the chopped garlic, cooking for another minute until fragrant.
  3. In a bowl, combine ground chicken, ½ teaspoon salt, garlic powder, onion powder, and dried oregano. Mix well, ensuring an even distribution of flavors.
  4. Add the chicken mixture to the skillet with the onion and garlic. Break it up while it cooks, allowing it to brown and render its moisture, about 6-8 minutes.
  5. Pour in the marinara sauce. Let it simmer for 5 minutes, allowing the flavors to meld beautifully.
  6. In a baking dish, layer the chicken-marinara mixture. Sprinkle generously with grated parmesan cheese, then top with shredded mozzarella and the toasted breadcrumbs.
  7. Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden brown.

Notes

Use fresh ingredients for the best results. Fresh garlic and onion enhance the flavor significantly. Experiment with additional herbs if desired.
