  • 1 1/2 tablespoons lime juice (about 1 small lime)
  • 1 1/2 tablespoons neutral or vegetable oil
  • 2 tablespoons soy sauce (low sodium)
  • 1/2 tablespoon fish sauce
  • 2 tablespoons brown sugar
  • 2 teaspoons minced garlic (about 2 garlic cloves)
  • 1 teaspoon fresh grated ginger
  • 1/4 teaspoon red chili flakes
  • 1 tablespoon cilantro (and more for garnish)

Instructions

  1. Prepare the chicken by trimming it if necessary. Place it in a large bowl.
  2. In a separate bowl, combine lime juice, oil, soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, red chili flakes, and cilantro to create the marinade.
  3. Pour the marinade over the chicken, ensuring it’s well coated. Let it marinate for at least 30 minutes or up to 2 hours for enhanced flavor.
  4. Preheat the grill to medium-high heat, ensuring the grates are clean and lightly oiled to prevent sticking.
  5. Remove the chicken from the marinade, allowing excess liquid to drip off, then place it on the grill.
  6. Grill the chicken for about 5-7 minutes on each side, depending on thickness, until fully cooked and juices run clear.
  7. Transfer the chicken to a plate and let it rest for 5 minutes before slicing.

Notes

For an extra layer of flavor, brush the chicken with any leftover marinade during the last minute of grilling. Use a digital meat thermometer to check for doneness; the internal temperature should reach 165°F.
