Grilled Mango Chicken

A juicy and flavorful grilled chicken dish marinated in a vibrant mango and soy sauce blend, perfect for summer cookouts.

  • 2 lb. boneless skinless chicken thighs
  • ½ cup soy sauce
  • 2 ripe mangos
  • 3 garlic cloves
  • ½ teaspoon fresh grated ginger
  • 2 tablespoons water (or more as needed)
  • Fresh cilantro (for garnish)

Instructions

  1. Add the chicken to a large plastic bag or baking dish.
  2. In a small blender, combine the soy sauce, mangoes, garlic, ginger, and water. Pulse until smooth.
  3. Reserve ¼ cup of the marinade for later.
  4. Pour the remaining marinade over the chicken and refrigerate for 2 to 8 hours.
  5. Preheat the grill to 400°F.
  6. Remove the chicken from the marinade and grill for 6-7 minutes on each side until fully cooked.
  7. Brush with the reserved marinade, garnish with cilantro, and serve.

Notes

For an extra kick, consider adding cayenne pepper or hot sauce to the marinade. Serve with lime wedges for added zest.
