A light and satisfying salad featuring shredded rotisserie chicken, fresh herbs, and a creamy green goddess dressing.

Ingredients

  • 2 cups shredded rotisserie chicken
  • ½ cup green goddess dressing
  • ¼ cup fresh herbs (parsley, basil, chives), chopped
  • 6 cups lettuce or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, diced (optional)
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the shredded rotisserie chicken and green goddess dressing.
  2. Add in the chopped fresh herbs and mix well until all ingredients are coated.
  3. In serving bowls, layer the lettuce or mixed greens.
  4. Top the greens with the chicken mixture, cherry tomatoes, cucumber, and avocado if desired.
  5. Season with salt and pepper to your preference.
  6. Serve immediately or store in the refrigerator for meal prep.

Notes

For added crunch, consider mixing in nuts or seeds. Adjust salt and pepper to your taste before serving.
