Delicious and comforting green chili chicken enchiladas, perfect for family gatherings or busy weeknight dinners.

  • 1 can (10 oz) green enchilada sauce
  • 1 cup shredded cheddar cheese
  • 8 small corn tortillas
  • 1 can (4 oz) diced green chilies
  • 1 cup sour cream
  • Chopped cilantro for garnish

Instructions

  1. In a large bowl, mix together the cooked shredded chicken, diced green chilies, and half of the shredded cheddar cheese until well combined.
  2. Warm the small corn tortillas in a skillet or microwave to help make them pliable.
  3. Spread a thin layer of enchilada sauce on the bottom of your baking dish to prevent sticking.
  4. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
  5. Pour the remaining enchilada sauce over the filled tortillas, ensuring they are well covered.
  6. Sprinkle the remaining cheddar cheese on top of the enchiladas.
  7. Bake for about 25 minutes or until bubbling and golden.
  8. Serve with a dollop of sour cream and a sprinkle of chopped cilantro.
