Delicious green chile chicken enchiladas, filled with creamy chicken and cheese, perfect for weeknight dinners or special gatherings.

  • 2 cups cooked shredded chicken
  • 8 ounces cream cheese, softened
  • 1 can (4 ounces) diced green chiles
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 8 small flour or corn tortillas
  • Toppings such as sour cream, chopped cilantro, or diced onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cooked shredded chicken, softened cream cheese, and diced green chiles. Stir until well blended and creamy.
  3. Spread a thin layer of enchilada sauce on the bottom of the baking dish.
  4. Fill each tortilla with a generous portion of the chicken mixture, then roll them up tightly and place seam-side down in the baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  6. Bake for 20-25 minutes or until bubbly and cheese is melted.
  7. Serve hot with your choice of toppings.
