Deliciously comforting Green Chicken Enchiladas wrapped in tortillas and topped with zesty green salsa.

Ingredients

  • 2 cups cooked, shredded chicken
  • 8 small flour or corn tortillas
  • 2 cups green salsa
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup sour cream
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the shredded chicken, cumin, garlic powder, salt, and pepper.
  3. Take a tortilla, fill it with a portion of the chicken mixture, and roll it up tightly.
  4. Place the rolled tortillas seam-side down in a baking dish.
  5. Pour the green salsa over the top of the enchiladas, covering them evenly.
  6. Sprinkle the shredded cheese on top.
  7. Bake in the preheated oven for 20-25 minutes, or until heated through and the cheese is melted and bubbly.
  8. Remove from the oven and let cool slightly. Serve with a dollop of sour cream.

Notes

Customize with black beans or corn for extra flavor. Use a nonstick dish for easier serving.
