A warm bowl of Greek lemon chicken soup combining chicken, fresh vegetables, and zesty lemon flavors for a comforting meal.

Ingredients

  • 1 lb chicken breast
  • 6 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a little olive oil over medium heat in a large pot.
  2. Sauté the onion, garlic, carrots, and celery until softened.
  3. Add the chicken breast and pour in the chicken broth.
  4. Bring to a boil, then reduce to a simmer.
  5. Cook until the chicken is fully cooked, about 20 minutes.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Stir in lemon juice, lemon zest, oregano, salt, and pepper.
  8. Simmer for an additional 5 minutes.
  9. Serve hot, garnished with fresh parsley.

Notes

For a heartier version, add cooked rice or orzo pasta. Adjust lemon juice based on your taste preference.
