A flavorful and easy Greek Lemon Chicken recipe featuring marinated chicken thighs baked to perfection.

  • 4 chicken thighs
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Coat the chicken thighs in the marinade and let sit for at least 30 minutes.
  4. Place the marinated chicken thighs in a baking dish and pour any remaining marinade over them.
  5. Bake for 35-40 minutes or until the chicken is cooked through and golden brown.
