  • 1 cup Greek yogurt

  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, chopped
  • 1 cup spinach

  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked quinoa or rice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe pan, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the diced chicken and cook until no longer pink, ensuring even cooking throughout.
