  • 1 cup grated zucchini
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Feta cheese (optional)
  • Burger buns
  • Tzatziki sauce (homemade or store-bought)

Instructions

  1. In a large bowl, combine the ground chicken, grated zucchini, chopped red bell pepper, chopped red onion, parsley, olive oil, garlic powder, oregano, salt, and pepper. If desired, fold in feta cheese.
  2. Mix everything until well incorporated.
  3. Form the mixture into patties of your preferred size.
  4. Preheat your grill or skillet over medium heat.
  5. Cook the patties for about 5-7 minutes on each side, or until fully cooked through.
  6. Serve the burgers on buns with tzatziki sauce and your choice of toppings.
