Delicious Greek chicken bowls featuring juicy chicken breast, fresh vegetables, and creamy tzatziki sauce.

  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 1 cup feta cheese, crumbled
  • Fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 1 clove garlic, minced
  • 1 tbsp lemon juice

Instructions

  1. Cook the chicken breast in a skillet over medium heat until fully cooked, seasoning with salt and pepper.
  2. In a bowl, assemble the quinoa or rice as the base.
  3. Top the base with the cooked chicken, cherry tomatoes, cucumber, red onion, bell pepper, and feta cheese.
  4. For the tzatziki sauce, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl.
  5. Serve the Greek chicken bowls with a generous dollop of tzatziki sauce and sprinkle parsley on top.
