Delicious golden baked chicken rissoles that are crisp on the outside and tender on the inside, perfect for family dinners.

Ingredients

  • 1 pound ground chicken
  • ½ cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • ½ cup chopped fresh parsley
  • 1 egg
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Olive oil spray

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, onion, garlic, grated carrot, and parsley.
  2. Crack the egg into the mixture and stir until well combined.
  3. Season with salt, black pepper, paprika, and oregano, mixing thoroughly.
  4. Shape the mixture into small patties, about the size of a golf ball, and place them on the prepared baking sheet.
  5. Lightly spray the rissoles with olive oil.
  6. Bake in the preheated oven for 20-25 minutes, or until golden brown and fully cooked.

Notes

Chill the shaped patties for about 15 minutes before baking for easier handling. Serve with dipping sauces for a twist.
