A crowd-pleasing dish that transforms chicken thighs into a flavorful meal with a sweet and tangy sauce paired with a hint of spice.

  • 2 lb chicken thighs (trimmed and cut into 1-inch pieces)
  • 1/2 cup cornstarch
  • 1/4 cup extra light olive oil (for frying, plus more as needed)
  • 2 tbsp minced ginger
  • 3 cloves garlic (or 1 tbsp grated or finely minced)
  • 1/2 tsp red pepper flakes (or adjusted to taste)
  • 1 tsp sesame seeds (optional for garnish)
  • 1/2 cup cold water
  • 5 tbsp low sodium soy sauce
  • 3 tbsp rice vinegar (or more for taste)
  • 1 1/2 tbsp hoisin sauce
  • 4 tbsp granulated sugar
  • 1 1/2 tbsp cornstarch

Instructions

  1. Toss the chicken pieces in batches with cornstarch, tapping off any excess. Set aside.
  2. In a bowl, combine soy sauce, rice vinegar, hoisin sauce, granulated sugar, cold water, and cornstarch. Whisk until smooth.
  3. Preheat a non-stick skillet over medium heat and add olive oil for frying.
  4. Cook chicken in batches until golden brown, about 5-7 minutes. Remove and drain on paper towels.
  5. Sauté garlic, ginger, and red pepper flakes until fragrant.
  6. Pour the sauce mixture into the skillet, bring to a simmer for one minute.
  7. Return the crispy chicken to the pan, tossing to coat in the sauce. Serve warm and garnish with sesame seeds.

Notes

Use chicken thighs for juiciness. Adjust red pepper flakes to your spice preference and consider adding vegetables for a nutritious twist.
