  • 1/2 cup cornstarch
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • Oil for frying
  • 1/4 cup soy sauce
  • 1/4 cup sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil
  • 34 dried red chilies
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Green onions for garnish

Instructions

  1. Mix the cornstarch and flour in a bowl and set aside.
  2. Dip each chicken piece into the beaten eggs, then dredge in the flour mixture.
  3. Heat oil in a deep pan over medium-high heat.
  4. Fry the coated chicken pieces for 5-7 minutes until golden brown and fully cooked.
  5. Drain the chicken on paper towels to absorb excess grease.
  6. In a bowl, whisk together soy sauce, sugar, rice vinegar, hoisin sauce, sesame oil, garlic, and ginger.
  7. In a skillet, heat a little oil and sauté the dried red chilies until fragrant.
  8. Pour in the sauce mixture and bring to a simmer until it thickens.
  9. Add the fried chicken pieces to the skillet and toss to coat in the sauce.
  10. Serve hot, garnished with chopped green onions.

Notes

For added flavor, consider marinating the chicken before cooking and experiment with different levels of spice.
