A comforting garlic Parmesan chicken pasta dish made with tender chicken thighs, flavorful garlic, and rich Parmesan, creating a delicious meal that’s easy to prepare.

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp butter
  • 1 Tbsp olive oil
  • 4 garlic cloves, minced
  • 8 oz linguine (or another long pasta)
  • 1 ½ cups low-sodium chicken stock
  • 1 ½ cups milk (whole, skim, or unsweetened oat)
  • ¾ cup freshly grated Parmesan, plus extra for serving
  • 2 cups baby spinach (optional)
  • Pinch red-pepper flakes (optional)

Instructions

  1. Season the chicken chunks with salt and pepper. In a large deep skillet, heat butter and olive oil over medium-high heat. Add chicken in a single layer and sear for 3-4 minutes until golden brown. Flip and cook for another minute, then transfer to a plate to rest.
  2. Reduce heat to medium, add minced garlic to the skillet and sauté for about 30 seconds until fragrant. Deglaze the pan with chicken stock and milk, scraping up browned bits, and bring to a gentle simmer.
  3. Add dry linguine, submerging it in the liquid. Simmer uncovered for 8-10 minutes, turning occasionally until almost tender. Return chicken and any juices to the pan and simmer for 2 minutes.
  4. Stir in ½ cup of Parmesan until melted. If using, add baby spinach and allow to wilt for about 30 seconds.
  5. Adjust sauce consistency with milk or stock as needed. Serve topped with remaining Parmesan and a pinch of red-pepper flakes.
