A simple yet flavorful dish featuring tender chicken breasts seasoned with fresh herbs and served with creamy mashed potatoes.

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 2 pounds russet potatoes
  • ½ cup heavy cream
  • 2 tablespoons brown sugar
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides. In a small bowl, combine minced garlic, chopped parsley, and thyme leaves. Rub this mixture all over the chicken breasts.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for about 5-6 minutes until golden-brown. Flip and repeat on the other side. Add butter and baste the chicken until it reaches an internal temperature of 165°F. Transfer to a plate and cover loosely with foil.
  3. In the same skillet, add brown sugar and balsamic vinegar. Stir until the sugar dissolves and caramelizes. Pour in chicken broth, scraping up any browned bits and simmer for 5-7 minutes until thickened.
  4. Peel and cut potatoes into chunks, boil in salted water for 15-20 minutes until fork-tender. Drain, return to pot, and add butter and heavy cream. Mash until smooth, seasoning with salt and pepper.
  5. Serve mashed potatoes on each plate, top with a chicken breast and drizzle with the sauce. Garnish with fresh herbs if desired.

Notes

Allow the chicken to rest after cooking for maximum tenderness. Customize herbs based on preference and consider adding garlic or cheese to the mashed potatoes for extra flavor.
