Delicious and juicy bone-in chicken thighs marinated with garlic, rosemary, and thyme, baked to perfection.

  • 4 pieces bone-in, skin-on chicken thighs
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • Lemon wedges for serving

Instructions

  1. Marinate the chicken thighs by placing them in a resealable plastic bag or shallow dish.
  2. Pour the marinade (olive oil, garlic, rosemary, thyme, paprika, salt, and pepper) over the chicken, ensuring each piece is well coated.
  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to 2 hours for deeper flavor.
  4. Preheat your oven to 425°F (220°C).
  5. Remove the chicken from the marinade and place it skin-side up on a baking sheet lined with parchment paper. Discard any leftover marinade.
  6. Bake the chicken thighs in the preheated oven for 35-40 minutes or until the skin is crispy and the internal temperature reaches 165°F (75°C).
  7. Remove the chicken from the oven and let it rest for about 5 minutes to allow the juices to redistribute.
  8. Serve the chicken with lemon wedges on the side to add a refreshing zing.

Notes

For crispier skin, broil the chicken for the last few minutes while watching closely to avoid burning. Marinating overnight enhances the flavor.
