A comforting and flavorful French chicken casserole featuring tender chicken, crispy bacon, sweet apples, and a rich dry apple cider sauce.

  • 1 cup dry apple cider
  • 4 slices crispy bacon
  • 2 sprigs fresh thyme
  • 2 apple wedges
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • Optional for serving: mashed potatoes, rice, or crusty bread

Instructions

  1. In a large skillet, cook the bacon until crispy. Remove from the pan and set aside.
  2. In the same skillet, add olive oil and brown the chicken pieces on all sides.
  3. Add the crispy bacon back to the skillet, along with thyme, apple wedges, salt, and pepper.
  4. Pour in the dry apple cider and bring to a simmer.
  5. Cover and braise over low heat for about 30-40 minutes, until chicken is cooked through.
  6. Serve with mashed potatoes, rice, or crusty bread to soak up the sauce.
