A simple and satisfying recipe featuring ground turkey, rice, and a blend of spices for a flavorful meal.

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet (1 oz) taco seasoning or 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 cup water or chicken broth
  • 1 (15 oz) can black beans (rinsed and drained)
  • 1 cup frozen corn
  • 4 cups cooked rice (brown or white)
  • Optional toppings: salsa, avocado slices, sour cream or Greek yogurt, shredded cheese, fresh cilantro (chopped), lime wedges

Instructions

  1. Prepare the rice according to package directions and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened (3-5 minutes).
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Add ground turkey and cook until browned (5-7 minutes), breaking it up as it cooks. Drain excess grease if necessary.
  5. Stir in taco seasoning and water (or broth), bring to a simmer, and cook for 2-3 minutes.
  6. Add rinsed black beans and frozen corn, cooking for another 3-5 minutes until heated through.
  7. To assemble, place cooked rice in bowls and top with ground turkey mixture. Add desired toppings and serve with lime wedges.

Notes

Feel free to add additional vegetables like bell peppers or zucchini for more nutrition and flavor.
