Attach the sous vide device to a large, deep pot. Pour in warm water until the pot is filled. Activate the device and adjust the temperature to precisely 153°F, ensuring it is neither 155°F nor 150°F.
Carefully place the eggs into the water. We suggest using a spoon for each egg to prevent any cracking while lowering them in. Let them cook for 25 minutes.
Move the eggs to a bowl of ice water to cool them down. Afterward, store them in a sealed container in the refrigerator; they can be kept for up to a week.
When you wish to enjoy one warm (though cold ones are perfectly fine), reheat it using the sous vide machine set to 150°F or by using a small pot with hot water for a few minutes. Next, break the egg into a bowl or small dish to allow any excess water or egg white to be removed before presenting your beautifully poached egg.
