A refreshing salad that combines cooked chicken, seasonal apples, and cranberries, capturing the essence of autumn.

Ingredients

  • 2 cups cooked chicken, diced
  • 1 apple, diced
  • 1 cup cranberries, fresh or dried
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup walnuts or pecans, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced chicken, apple, cranberries, celery, red onion, and nuts.
  2. In a separate bowl, mix together the mayonnaise, mustard, salt, and pepper.
  3. Pour the dressing over the salad mixture and stir until well combined.
  4. Chill for at least 30 minutes before serving.

Notes

For extra crunch, lightly roast the nuts before adding them. You can make this salad a day ahead for even better flavor.
