Ingredients

  • 2 cups cooked chicken, chopped
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cooked rice or quinoa
  • 1 bell pepper, diced
  • 1 small red onion, diced
  • 1 avocado, sliced
  • 1 cup black beans, rinsed and drained
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Combine the chicken, corn, rice or quinoa, bell pepper, onion, black beans, cumin, chili powder, salt, and pepper in a large bowl. Stir until well mixed.
  2. Divide the mixture into serving bowls.
  3. Top each bowl with avocado slices and garnish with fresh cilantro.
  4. Serve with lime wedges on the side for added flavor.
