Tender chicken thighs coated in a savory soy garlic sauce, delivering bold flavor with a crispy exterior.

  • 1 lb boneless, skinless chicken thighs
  • 3 tbsp potato starch
  • 3 tbsp all-purpose flour
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp neutral oil for pan-frying
  • 8 minced garlic cloves
  • 2 stalks of green onion (white and green parts separated)
  • 1 tsp red chili flakes
  • 1/2 cup chicken stock
  • 3 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp dark soy sauce
  • 1 tsp cornstarch

Instructions

  1. Dry the chicken thighs with a paper towel to remove moisture.
  2. Mix potato starch, all-purpose flour, garlic powder, salt, and black pepper on a plate. Coat chicken thighs with the dry mix.
  3. Heat neutral oil in a large frying pan over medium-high heat. Fry chicken thighs until golden brown on both sides, about seven minutes each side. Remove and set aside.
  4. In the same pan, sauté minced garlic, green onion white parts, and red chili flakes for about three minutes until garlic is golden brown.
  5. Combine chicken stock, honey, rice vinegar, dark soy sauce, and cornstarch to make the sauce and add it to the pan. Cook for one minute to thicken.
  6. Return chicken to the pan, coating it with the sauce, and cook for an additional five minutes.

Notes

For extra flavor, consider marinating the chicken in the sauce beforehand. Serve with steamed vegetables or rice.
