  • 1.5 lbs chicken thighs or breasts, cubed
  • 4 cups chicken broth
  • 2 cups carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup frozen peas
  • 1 cup heavy cream or half-and-half
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet and brown the chicken pieces.
  2. Transfer the chicken to the slow cooker.
  3. Add carrots, celery, potatoes, onion, garlic, thyme, rosemary, salt, and pepper to the slow cooker.
  4. Pour in the chicken broth and stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  6. About 30 minutes before serving, stir in the frozen peas and heavy cream.
  7. Adjust seasoning to taste and serve hot.

Notes
