A simple and flavorful low carb BBQ chicken bowl made with tender shredded chicken, zesty BBQ sauce, and topped with melted cheese.

Ingredients

  • 1 teaspoon olive oil
  • 1 medium onion, thinly sliced
  • 5 boneless, skinless chicken thighs
  • â…“ cup low-carb BBQ sauce
  • ½ cup shredded cheese (cheddar, mozzarella, or Colby Jack)
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a medium skillet over medium heat.
  2. Add the thinly sliced onions and cook for about 3-4 minutes until softened and golden.
  3. Season the chicken thighs with salt and pepper, add to the skillet with the onions, cover, and cook over medium-low for 2-3 minutes.
  4. Remove the lid and cook until the chicken is browned and reaches an internal temperature of 165°F, about 10 minutes.
  5. Shred the chicken in the pan using two forks, then pour in the BBQ sauce and stir to combine. Cook for an additional 1-2 minutes.
  6. Sprinkle shredded cheese over the mixture, cover, and let it melt for 1-2 minutes. Serve immediately.

Notes

For extra flavor, consider adding spices like garlic powder or smoked paprika. Serve over fresh greens or cauliflower rice.
