A delightful and filling dish combining orzo pasta with high protein chicken and vibrant vegetables.

Ingredients

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lb chicken breast, diced
  • 1 cup spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional) for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add garlic and sauté until fragrant.
  3. Cook the diced chicken breast until browned and cooked through.
  4. Stir in the orzo pasta and add chicken broth. Bring to a boil, then reduce heat and simmer for about 10 minutes, or until the orzo is al dente.
  5. Add spinach and cherry tomatoes. Cook for an additional 2-3 minutes until spinach is wilted.
  6. Season with salt and pepper.
  7. Serve warm, topped with grated Parmesan cheese if desired.
