  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon lime juice
  • 1 teaspoon chili paste (optional)
  • Skewers (soaked in water if wooden)
  • For the peanut sauce:
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • Water to thin (as needed)

Instructions

  1. In a bowl, mix together the soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, lime juice, and chili paste (if using).
  2. Add the chicken cubes to the marinade, ensuring they are well-coated. Let sit for at least 30 minutes.
  3. To prepare the peanut sauce, combine peanut butter, soy sauce, lime juice, honey, and water. Adjust the water as needed for consistency.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken onto the soaked skewers.
  6. Grill the chicken skewers for 10-15 minutes, turning occasionally, until fully cooked and golden.
  7. Serve warm, drizzled with peanut sauce or served alongside for dipping.

Notes

For juicy chicken, marinate overnight if possible. Experiment with various vegetables on skewers for added color and flavor.
