A comforting and hearty white chicken chili soup made in a crockpot, perfect for busy days.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the white beans, corn, diced green chilies, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
  3. Stir until combined.
  4. Cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through.
  5. Remove the chicken, shred it with two forks, and return it to the pot.
  6. Stir in the sour cream and cheese (if using) until melted and well combined.
  7. Garnish with chopped cilantro before serving.

Notes

Adjust spices to taste; add cayenne for heat. Prepare ingredients the night before for easier cooking.
