A quick and flavorful chicken stir fry with vibrant vegetables and a savory sauce, perfect for busy weeknights.

Ingredients

  • 1 lb chicken tenders
  • 1 head of broccoli
  • 2 bell peppers
  • 1 yellow onion
  • 1/4 cup + 2 tbsp soy sauce
  • 3 tbsp olive oil
  • 2 1/2 tbsp honey
  • 1 1/2 tsp garlic powder
  • 1/2 tsp ground ginger
  • Salt and pepper to taste

Instructions

  1. Chop your broccoli, bell peppers, and onion as described.
  2. Cut the chicken tenders into strips.
  3. Heat 1 tbsp of olive oil in a pan over medium heat.
  4. Add the chicken, seasoning with salt and pepper. Cook until browned and cooked through, then remove from heat.
  5. In the same pan, add an additional 2 tbsp of olive oil. Toss in the broccoli, sliced peppers, onion, garlic powder, and ground ginger, adding a pinch of pepper.
  6. Sauté for about 10 minutes, or until the vegetables soften.
  7. Reduce heat and stir in the soy sauce and honey. Let simmer for a few minutes.
  8. Return the cooked chicken to the pan. Mix well and simmer for another 5 minutes, allowing the flavors to meld. Adjust salt and pepper to taste.
  9. Serve over rice for an even heartier meal and relish the flavors crafted in each bite.
