  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 425°F and line a rimmed baking sheet with parchment paper.
  2. Pat the chicken thighs dry with paper towels.
  3. Drizzle olive oil over the chicken and rub it in, aiming to get some under the skin.
  4. In a bowl, mix garlic powder, onion powder, paprika, thyme, rosemary, salt, black pepper, and smoked paprika. Sprinkle this mix evenly over both sides of the thighs.
  5. Place the chicken skin-side up on the lined baking sheet, ensuring space between each piece.
  6. Roast in the oven for 35-40 minutes until the internal temperature reaches 165°F.
  7. Let the chicken rest for 5 minutes before serving.
