Ingredients

Scale
  • 2 pounds boneless skinless chicken thighs (approximately 8 pieces)
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder

Instructions

  1. Preheat your oven to 400°F with the rack positioned in the center.
  2. Brush a baking sheet with 1 tablespoon of olive oil.
  3. Arrange the chicken thighs on the baking sheet, leaving space between each piece.
  4. Drizzle the remaining olive oil over the chicken.
  5. Bake the thighs for 18 minutes, then flip them over and bake for an additional 14 minutes.
  6. Use a meat thermometer to check that the internal temperature reaches 175°F.
  7. Tent the chicken with foil and let it rest for 3 minutes before serving.

Notes

For added flavor, consider marinating the chicken ahead of time or trying different spices like thyme or rosemary. Avoid overcrowding the baking sheet for the best results.
