A comforting one-pan meal featuring tender chicken, fluffy rice, and creamy tzatziki sauce.

  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup tzatziki sauce
  • 1 cup diced cucumbers
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, combine the diced chicken, rice, and chicken broth.
  3. Spread the tzatziki sauce evenly over the chicken and rice mixture.
  4. Add the diced cucumbers and tomatoes on top.
  5. Season with salt, pepper, and fresh dill.
  6. Cover the dish with aluminum foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
  8. Let it cool for a few minutes before serving.
