A comforting dump-and-bake recipe featuring tender chicken and fluffy rice, topped with a refreshing tzatziki sauce.

  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup Greek yogurt
  • 2 cloves minced garlic
  • 1 cup grated cucumber
  • 2 tablespoons dill
  • 2 tablespoons lemon juice
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1 cup cucumber substitute (diced zucchini or bell pepper)

Instructions

  1. Preheat your oven to 375°F. Grease a large baking dish.
  2. Rinse the rice until the water runs clear.
  3. Combine the rice, chicken broth, salt, and black pepper in the greased baking dish.
  4. Place the chicken breasts on top of the rice mixture and drizzle with olive oil.
  5. Sprinkle paprika and oregano over the chicken.
  6. Cover the baking dish with foil and bake for 30 minutes.
  7. Prepare the tzatziki sauce by combining Greek yogurt, minced garlic, grated cucumber, dill, and lemon juice in a bowl.
  8. Stir well and season with salt and pepper to taste.
  9. Remove the foil after 30 minutes and bake for an additional 10-15 minutes or until chicken is cooked through.
  10. Let it cool before serving. Scoop into bowls and drizzle with tzatziki sauce. Add diced zucchini or bell pepper as needed.

Notes

For best results, use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F. Let the dish rest before serving to enhance the flavors.
